How to: Fish Cakes wrapped in lettuce with guacamole.

       Fish and I aren't really friends. Leftover fish and I are definitely enemies. However, I have found a super easy way to jazz these fishes up.
       For those of you that feel like you are missing some omega 3 in your life because fish just isn't you cup of tea, I think it's a nice way to enjoy fish. It makes such an awesome snack, lunch and dinner alternative. Whipped these fish cakes in a salad and you're good to go! Healthy and delicious, how can anyone say no?

What you'll need: (Approx. makes 2 servings)
Fish Cake Component
- 50g cous cous
         Note: Usually made with breadcrumbs for the crispy texture however, cous cous works just as well
- 230g of leftover fish
          Note: I used 115g of my Mum's grilled salmon and a can of John West's 'Chilli' flavoured. Feel free to use any flavour or form of fish you like
- 1 egg


Method:
Fish cakes:
1. Prepare cous cous as directed
2. Add cous cous and egg to fish container
3. Mix cous cous, egg and fish together until well combined, season with a pinch of salt and pepper

4. Divide fish portion into sections, ready to mould (I wanted 8 cakes)

5. Using clean hands, mould fish mix into hamburger - like patties

6. Heat non-stick fry pan to medium / high heat 
             Note: The natural oils from the fish are good enough to oil the pan, however if you feel they're going to stick, add a tablespoon of oil 
7. Place fish patties into pan, cooking one side for approx. 3 minutes before flipping
             Note: Try and be patient, flipping these cakes early will mean they're not crisp and will break down



After 3 minutes on one side
8. Continue cooking the other side for another 3-4 minutes until both sides are crispy and identical. 
             Note: Don't keep flipping these cakes no matter how much you want to otherwise they won't be  as crispy/ uneven cooking
9. Serve as is with your favourite sauce(s) or continue on reading for my take on guacamole that work perfectly with these crispy fish cakes

My favourite sauces to enjoy these with are sweet chille & ranch!

What you'll need:
Lettuce/ Guacamole component
- 3 layers of iceberg lettuce (or however much you prefer)
1 medium/ large avocado
- 1 small cucumber (diced)
- 1 medium tomato (diced)
- 1 Tbs. coriander (roughly chopped)
- 1/2 red onion (diced)
- 1 tsp. lemon juice


Method:
1. Mash avocado in a small bowl
             Note: I left mine chunky but mash away if you prefer it more finely minced
2. Combine  cucumber, tomato, red onion, lemon juice and coriander to the avocado and mix well
         Note: I know traditionally, cucumber isn't usually used in guacamole dishes but, I love my cucumber and by adding all these ingredients with the avocado, it's like a salad in a bowl

3. Add a pinch of salt to taste
4. Assemble those fish cake lettuce wraps: Take layer of lettuce, pop on some guacamole and tear in some fish cake!




           What I love about these is how fast and easy they are to make. They're so crispy and great when you may only have canned fish in your pantry. You can customise them however you like and better yet, fall in love with leftover fish as I have.

Nibble Nation: An Update

Hey Nibblers!

       If you're a follower or regularly check out 'Nibble Nation' you may have noticed I haven't posted much content in a little while. I even missed out on my 'Travel Tuesdays' this week. With university exams blooming this week, I thought I give you a little update on why I've been MIA. I have a couple of simple recipes coming soon with some more restaurants review coming your way. Exams won't be finished until the 25th of June but, until then, feel free to leave me any recipes you would like me to try. I'll be free as ever for in-between semesters so would love to try/ do some new things! Leave your requests below in the comments section.

     Hope you're all having an amazing week and for all you Nibblers that also have exams, best of luck! Study hard, nibble away, and get plenty of rest.

Travel Nibbles: 'Trattoria Bondi' Review + Mini 'Triangolo dell Bermuda' Review

     This week, Kelly and I find ourselves in Florence/ Firenze. Unfortunately, we were unlucky with our train times so we only had one night in Florence. Being two girls in a strange place, we didn't want to stray too far from our hostel (PLUS Florence). Luckily, with the help of Tripadvisor, we were able to find a place to grub on on the same street, only 5 minutes away.

      From the outside, 'Trattoria Bondi' looked pretty small. But don't be quick to judge a book by its cover because we soon found out this place was oddly shape but, had a tonne of space to sit and it was packed mostly with tourists which could be why Tripadvisor has a 4.5/5 rating for 'Trattoria Bondi.' The restaurant's name had me at Bondi. Took me back to the lovely beaches of Sydney for a minute there until, I saw the menu. It is probably a hit because, it is the cutest thing I've seen yet in terms of menus.

        Anyway, we were starving so, as it was our last night in Italy, I had to order a pasta dish. I decided on the Ravioli. Presentation lacked. It did not look appetising at all. But as I said before, looks can be deceiving but, in this case, looks mattered. The ravioli was half cooked with some bits dry like cardboard. The tomato- based sauce was good but, couldn't make up for the lack of flavour and texture all round.

        Kelly on the other hand, wanted some meat after days of just mushrooms and carbs. She opted for the roast chicken with mushroom sauce, salad and roasted potatoes. This looked a tad more colourful which was promising. I had a taster of hers and while it was quite a good portion, there was nothing outstanding about this one. Just a regular dish that we could have all cooked easily at home.

           And, of course we were suckers for dessert ordering. We had the 'Creme Brulee with chocolate sauce' to share. Yup, they gave you a choice of what topping you wanted. Kelly being the chocoholic and me, being the best cousin knew she would have wanted to try chocolate and so we did. It did not look like a toasty top creme brulee we're used to that's for sure. I love when you get to crack the top of a brulee but not the case for this one. It was more like a less condensed, sweeter version of custard that had drops of chocolate sauve on top. Nope, nothing special here either.

        All in all, photos from the food this night aren't amazing. Sorry guys! But, I'm not too hurt because the dishes we had were nothing to die for. The 4.5/5 rating from Tripadvisor, I do not understand but, I do have to say that 'Trattoria Bondi' has a great cosy atmosphere and friendly staff. The other plus side are their dishes are affordable and good if you're a backpacker or just want a place to chat with friends. I think the high rating on Tripadvisor made me have high expectations but, it wasn't a terrible experience just, could have been better.

        No idea why they chose this name. Perhaps they want us to get lost in their Bermuda Triangle of flavours? Okay, no. Bad joke. This had a 4.5/5 review on Tripadvisor as well but, we can't rely on that too much now. We decided on three scoops for 7 euros. We chose: chocolate, mint and hazelnut coffee. This was amazing. I love mint so it was super refreshing after having some pretty sweet creme brulee. I loved all the flavours and all had real chunks of chocolate and nuts inside which was amazing. The man that served us was super friendly as well so definitely going back! Only thing is, my fingers were swollen after holding this on the way back. Serves me right for eating gelato in the Winter.

'Criniti's' Darling Harbour Review.

          As I mentioned in my 'Banh Bong Lan' post, my Mummy just recently turned 50! To celebrate, Mum wanted something with a good atmosphere and she loves the weekly Darling Harbour fireworks so I chose 'Criniti's' at Darling Harbour. I've eaten here about two times but I can't remember much of the experience so it was great to come in with no expectations. Mum also wanted to try those 1M pizzas 'Criniti's' offers so may as well use her birthday to try it. I know she loves the view so I booked about three weeks in advanced and requested a table next to the window for the view. They delivered and gave us a table outside with a great view of the harbour and heaters around us so, those Autumn chills were not felt at all. So far so good, Criniti's!

We were able to sit at a table on their balcony area, overlooking the harbour.

          For our entree/ appetizer we ordered the 'Calamari Fritti,' ($19.90). On the menu, the dish is described as a crispy salt and pepper calamari with rocket and balsamic dressing. Every time I see salt and pepper calamari, I just have to have it. Presentation wise, it was good. The lemon they had on the plate had a mesh cover to stop seeds from falling which is a nice touch. Portion size was decent but when it came to taste, the calamari was salty. It was perfectly crispy and cooked however, after a couple of pieces, the salt took over.

              The second appetizer was at my brother, Richard's request. He's not a huge fan of Italian cuisine so I made sure he picked a dish that appealed to him. He chose the 'Wood fired sausages' ($18.90) a 'wood fired pork and pepper sausage, parmigiano, rocket, cannellini served with Italian bread.' I liked the presentation of this dish. The rustic look and how we're able to see all the components in this dish was appealing. In terms of taste, nothing amazing. It was a pretty damn good sausage though. I love everything sausage so, a bit bias on my side. But it didn't leave an oily taste in my mouth afterwards which is good, makes it feel less fatty than it is. The rest of the components was so, so. Nothing spectacular apart from this dish apart from the fun presentation.

           For our main, we ordered the 'Gnocchi ai quattro formaggi' ($22.90), 'home-made gnocchi with gorgonzalo, parmigiano, mozzarella, scamorza, cream and parsley.' I love gnocchi and I loved this gnocchi. It is really cheesy but if you ordered this without reading the description and complained, it's all on you. I think it's great as a sharing dish but, not as a main for one. The mixture of all the cheeses work well and give a very pungent taste so, if you're not a fan of cheese, don't go for this one. I loved the floral plate they displayed the gnocchi in. Would love a plate like this for myself.

            The next main we ordered was the 'Linguine alla scampi' ($32.90) 'Western Australia Scampi, pomodora, pachino sugo, olive oil, chilli, parsley in a red garlic sauce.' I loved the presentation of this dish. Having the scampi on display, still in it's shell just made the dish feel put together, fresh and reminded me of a dish I would receive on a holiday at the beach. The linguine was al dente and every strand was well coated in the garlic oil which was delicious. It was just a light dish that worked well in between the heavy dishes. While the scampi was not enough for the six of us to share, have a hint of it was enough to take you to paradise.

          Lastly, the 1M pizza. We were allowed to choose three flavours and being a carnivorous family, I tried to choose meaty toppings. We chose 'Azzuri,' (proscuitto, bufala, mushrooms, artichokes, semi-dried tomatoes, basil and ricotta), 'Minchia,' (ham, pancetta, salame, capsicum, mushroom, mozzarella, olives and red onion) and 'Padrino,' (chicken, advocado, mozzarella and semi sun-dried tomatoes.)

          I felt all the topics were great but there a quite a few topics that you could choose from to satisfy your own tastebuds. I felt the 'Minchia' topic had a generous serving of meats but didn't have enough sauce on the base which made it a tad salty.
          The 'Azzuri' section of the pizza was delicious. I love proscuitto and basil and with the dollops of ricotta, it was perfect. They were quite generous with the proscuitto too which is a plus for what you pay for it anyway.
          My least favourite was 'Padrina.' They weren't generous at all with the chicken/ advocado toppings and no stand out from this one.

             We couldn't finish all the pizza, so asked to take it away. They gave us our own pizza box which I like so, don't be scared to ask if you don't finish it!

         All in all, service was pretty good at the start through to the finish, However, they took a while to clear finished plates and they did take a while with bills and such. We couldn't wait much longer as we wanted to head off to Vivid Sydney afterwards so, I had to walk up to a waiter myself. 

         In terms of price range, it's not the cheapest dinner. All up it was $226.10 including drinks for six people which isn't too bad but, in terms of taste and proportions I feel it is over-priced for what it is. It has a great atmosphere if you're prepared and book in advanced and know roughly what you want to order as it might be hard to order when they're busy. I think Criniti's is good for group dinners but not so much for an intimate gathering. My parents mostly loved our table and setting and they liked the overall experience with the pasta and 1M long pizzas but would not be a top place on their list nor mine. 

        Now, for shots from Vivid Sydney. The light festival is still on until the 10th of June so, if you still haven't been and are a sucker for pretty lights you should schedule for a lovely evening out. Expect crowds though!
